Advanced HACCP is an extension of our HACCP Principles and Applications course. It’s perfect for those who have already completed HACCP P&A, want to extend their HACCP knowledge, want to satisfy HACCP requirements, and most importantly don’t want to sit through listening to the same HACCP P&A/ Refresher course every 3 years! Advanced HACCP training is for like-minded individuals that want to go beyond the minimum requirements and extend their knowledge of HACCP.

Our Advanced HACCP course includes Units of Competency:

FBPFSY3003: Monitor the implementation of food safety and quality programs
FBPFSY5001: Develop a HACCP based food safety plan

The course will run for 2 days:

Day 1 of the class, students will look at common food pathogens, considering what should be included in a Hazard analysis. Consider other Hazards and common CCPs, QCPs, their likely critical limits and other common controls as well as how to validate critical limits.

Day 2 will include looking at standard operating procedures, how they should be written and how to ensure they are implemented and consistently followed. Walk through customer complaint investigation, root cause analysis and more!

The discussions in this class will go beyond the ‘what is required?’ conversations that are common in HACCP P&A courses. Discussion will go into much greater depth of the food science that underpins HACCP, with trainers and fellow participants sharing relevant experience that the whole class will find useful.

It is recommended that participants have completed HACCP P&A or have strong knowledge of HACCP before they enrol in this course. This is to ensure that class discussion around HACCP can be at a high level, and everyone can contribute.
