HACCP
Principles & Applications

Complies with all Retailer and GFSI certification requirements, including SQF, BRC & WSE.
QMS Audits’ HACCP Training is delivered as a 2-day workshop. Participants also complete a small amount of post-course assessment. The assessments are based on tasks required for a HACCP, Freshcare, BRC, FSSC22000 or SQF audit.
Our course has two units of competency:
FBPFSY2001: Implement the Food Safety Program and Procedures
FBPFSY3002: Participate in a HACCP Team.
On the first day, we examine the food standards code, potential hazards and microbial growth.
Students write up their own toolbox talk – combining requirements of the Food Standards Code with internal company requirements, a training matrix, discuss contamination, monitoring and prerequisite programs.
On Day 2, we write up a basic HACCP Plan from a flow chart through to a HACCP Audit Table and then a Verification Schedule.
The in-house HACCP training satisfies the requirements for HARPS, SQF, BRC, Coles/CFMSR, WQA/Supplier Excellence, Global GAP, PrimeSafe, SafeFood Qld, AQIS, Dairy Safe Victoria and FSSC 22000. Participants undertake units of competency which are nationally recognised (RTO Number 45344).

Refresher

Understand pre-requisite programs and how a HACCP Plan is structured.
QMS Audits HACCP Refresher Training course satisfies the requirements for SQF, BRC, Coles/CFSMR, Woolworths, Supplier Excellence, GlobalGAP and FSSC 22000.
We have combined our one day HACCP Refresher training with an opportunity to network and problem solve with other quality managers, HACCP Team members and people involved with managing food businesses.
Throughout the HACCP Refresher Training, we walk through the 7 principles of HACCP as we build a HACCP plan, with participants discussing current issues they are facing. Discussions range from recent non-conformances from audits through to discussion around implementation and how to get buy-in from managers, directors, food handlers and production.
We revisit prerequisite programs and build a HACCP plan together as a class.

A basic snapshot of the requirements of the Food Standards Code and HACCP.
Participants gain an understanding of Good Hygiene Practices (GHP) and why these are important and need to be followed. The facility supplies QMS Audits with established CCPs and QCPs prior to the training. These are explained in detail along with monitoring requirements (records).
This course has been designed to give production supervisors and operators an understanding of basic food safety, contamination and their responsibilities towards maintaining HACCP or other certifications.

COOK CHILL
3 DAYS
Designed to give Quality Managers and Auditors a detailed understanding of cook chill
You will learn the skills and knowledge required to support an audit of food safety programs that include extended life cook chill processes.
This applies to cook chill products which are minimally heat-processed and foods distributed as chilled products with defined shelf-life.
It supports relevant legislation, such as food standards contained in the Food Standards Code and industry codes of practice relating to the validation and verification of a HACCP-based food safety program.
You will be taught to understand pathogen survival and growth characteristics, principles of heat treatment and chilling, including examination of het treatment, cooling, storage and shelf-life parameters. We will also discuss food preparation methods, including sous vide and principles of packaging, including the use of vacuum sealing.

For HACCP Team Members who would like to extend their knowledge to write and analyse a HACCP plan.
This two-day Advanced HACCP training course has been designed to extend your knowledge and build your skills to write and analyse HACCP Plans. It is an extension to our HACCP Principles and Applications training workshops.
Our course has two units of competency:
- FBPFSY3003 – Monitor the implementation of food safety and quality programs
- FBPFSY5001 – Develop a HACCP-based food safety plan
Course Content
Day 1 – As a class, we look at common food pathogens, considering what should be included in a hazard analysis.
We consider common CCPs and QCPs, their likely critical limits and other common controls as well as how to validate critical limits.
In the afternoon, we write up a hazard analysis and HACCP Audit Table based on a student’s processes. We consider the design, implementation and review of monitoring records.
Day 2 – We look at standard operating procedures or work instructions, how they should be written and how to ensure they are implemented and consistently followed. We walk through customer complaint investigation, (real!) root cause analysis and preventative measures and corrective actions.
Students are then asked to mark up an existing HACCP Plan from their organisation (or we can supply one), ensuring it is current and reflects current industry practices and confirm the correct assignment and validation of CCPs and QCPs.

For businesses looking to give their employees a quick glance at HACCP and what is required, we recommend the 4 hour HACCP Appreciation workshop, alternatively, if there are large groups of people, then we can offer a distilled version of the HACCP Appreciation Training in house.

Food safety supervisor
food Processing
1 DAY
Develop an understanding of basic food safety and write up a Good Hygiene Policy.
A food safety supervisor must be employed by every food manufacturing facility in Victoria and Queensland.
In Victoria, this applies if your business is a Class 1 or 2 facility. Class 3 and 4 facilities are not required to have a food safety supervisor as they are low risk.
In Queensland, all licensed facilities must have a food safety supervisor. Coles under their CFMSR standard has an aspirational requirement for all food handlers to have undergone training in this unit of competency.
QMS Audits offers this one-day training with some assessments conducted in the food processing areas. You will develop an understanding of basic food safety, including potentially hazardous foods through to inhibitors of bacteria growth and cross-contamination.
You will write up your own Good Hygiene Policy (GHP), after reviewing Chapter 3 of the Food Standards Code.
ACHIEVEMENT:

Crisis Management or Business Continuity, the identification of risks to supply. Mandatory for SQF Ed 9
QMS Audits offers Crisis Management training as a half-day session to satisfy the mandatory requirement of SQF Edition 9.
Incidents from truck strikes to cyclones and floods need to be considered as part of all retailer and GFSI audits. In this Crisis Management training session, we work through a series of potential incidents which may occur to your business.
Then as a group, we work out the most practical ways these could be prevented or recovered from. Templates are supplied to write your own business continuity plan, which satisfies GFSI requirements. SQF requires members of the Crisis Management Team to have completed Crisis Management training.

HACCP for Stockfeed explains how to HACCP works and how to write a HACCP Plan.
QMS Audits’ HACCP for Stockfeed training is a one day course that explains how HACCP works, then together as a class we will write a basic HACCP Plan for your stockfeed facility, basing it off one of the products or processes.
We supply templates including Scope, Flow charts, Product Description and Intended Use, Hazard Analysis, HACCP Audit Table and Verification Schedule.
The templates supplied are the same as what we use to write up HACCP Plans for FeedSafe audits.

HACCP Refresher

Designed for growers and packing sheds, this course complies with the requirements of HARPS.
This training course walks through food safety requirements for farms, focusing on chemical use, MRLs and ERLs as well as treatment of washing water and other potential farm-based Critical Control Points (CCPs) and Quality Control Points (QCPs).
For participants who have achieved or are working towards Freshcare Certification, please bring in your Freshcare manuals. Learn how HACCP has been ingeniously embedded into the Freshcare templates.
There is a short, multiple-choice based exam at the end of this course.
You can expect some lively debate as we facilitate class discussions around participant’s issues and their individual plans.

for pest control

A simplified version of HACCP without the focus on food, for Pest Control companies.
QMS Audits offers a simple HACCP certification program specifically designed for Pest Control companies. The HACCP Certification program is competitively priced to enable both small and large pest control companies to achieve HACCP Certification. The HACCP Certification system has been written with a series of templates, which the pest control company fills out during our HACCP for Pest Control workshops.
Participants learn how to write up procedures and what is required to comply with the HACCP requirements. The HACCP Certification requirements are based on the Code of Practice for Pest Management in the Food Industry published by the AEPMA and PMANZ.
Participants receive a HACCP Pest Control folder as part of the workshop. The folder contains all of the templates necessary to conform with the HACCP Pest Control folders.

Food Fraud and Food Defence Training (TACCP/VACCP) explains the threats to our food chain.
Food Defence and Food Fraud has been around for over five years. Yet, it seems the food safety fraternity is still struggling with the two different concepts.
Food Defence is identifies and prevents an attack on your business.
BRC, SQF, FSSC22000 and each of the major retailers have significant supplier requirements to ensure the risks of food fraud and food defence have been identified and controlled.
Food Defence, think needles in strawberries, focuses on identifying potential threats to your business and how to prevent them.
Food Fraud focuses on the substitution of food and packaging for economic gain. Think normal honey being sold as Manuka honey.
Failure to defend your business or to identify food fraud can have a large impact upon your reputation.
QMS Audits have developed templates that have simplified the management of suppliers and their products while ensuring they fulfil SQF, BRC, FSSC22000 and retailer requirements.
